Originating from the French word “gibier”, Jibie cuisine is comprised of dishes prepared from wild animals - an ancient tradition before farm-raised animals were prevalent in Japan.They highlight the essence of this tradition by using the highest quality, locally and ethically sourced game meat animals, which is then cooked at the table over charcoal. Yakiniku Shin also specialise in premium quality pure-blood MB9+ wagyu beef and offal cuts.
